Delicious Tomato Soup Recipe

Tomato soup is one of the refreshing and delicious soups. In many Indian restaurants, tomato soup is the most ordered appetizer. There are so many ways to make tomato soup. I love this simple homemade mildly sweet and tangy soup with great flavors of herbs, veggies, spices, and fresh tomatoes. You can add carrots along with beetroot to make the soup more healthy and nutritious.
Delicious Restaurant Style Tomato Soup
Ingredients
For Tomato Soup:
- 2 Tbsp Butter
- 1 Tsp Crushed Bay Leaves
- 2 Tbsp Minced Garlic
- 2 Tbsp Minced Ginger
- 1/4 Cup Sliced Onion
- 3 Tbsp Sliced Beetroot
- 6 Medium Tomatoes
- 1/2 Tsp Black Pepper (Crushed)
- 3/4 Tsp Salt
- 1 Tsp Dried Basil
- 1 Tbsp Sugar
- 4 1/2 Cup Water
For Corn Flour Slurry:
- 2 Tbsp Corn Flour
- 6 Tbsp Water
For Croutons:
- Butter
- Salt
- Garlic Powder
- Pepper
- Tea Rusks
Instructions
For Croutons:
- Set a pan on medium heat and add butter. Once the butter melts, add ¼ tsp of salt, garlic powder, and black pepper powder and mix well.
- Place tea rusks and flip them after a few seconds. Remove them and allow to cool. Using a knife cut them into cubes and your crunchy croutons are ready.
For Tomato Soup:
- Set a pan on medium heat, add butter, crushed bay leaves, minced garlic, and minced ginger. Saute for a minute.
- Add sliced or chopped onions and saute for 1-2 minutes.
- Add sliced or chopped beetroot and saute for another minute.
- Add finely chopped fresh tomatoes, crushed black pepper, salt, dried basil, and sugar. Mix and mash well.
- Add water and stir well. Cover and boil for 12-15 minutes for veggies to cook well. Allow to slightly cool before straining.
- Meanwhile in a bowl add corn flour, and water and stir well using a spoon to make lump-free slurry.
- Strain the soup mixture into another pan using a sieve and press down the pulp using a spoon or spatula to extract the liquid.
- Set the pan back on stove top on medium high heat and add the required amount of corn flour slurry to thicken the soup. Mix well and boil for a few minutes.
- Sprinkle some salt, crushed black pepper, and crunchy croutons.
- Serve hot and enjoy!

Notes
- You can use bread slices too for making croutons. Just toast them until they turn crunchy and later cube to the required size.
- You can use a blender jar to puree the cooked tomato mixture and then sieve the smooth pulp.
- Avoid food color as beetroots give perfect color to the soup.
